I'm a Sensory Scientist, working as Associate Professor in Food Sensory Innovation. As a scientist my main research drive is to understand what good food is, and how we enjoy it as part of our daily life. With this knowledge we can create new and innovative foods that change the way the world eats in favour of diversity and sustainability. As an educator I am keen on training future generations of food innovators to make healthy food more tasty and satisfying.

Eric Benson
Champaign, Illinois, United States of America
Eric Benson was born in Arizona and raised in Mid-Michigan where he later received his BFA in graphic and industrial design from the University of Michigan in 1998. He worked professionally as a UI/UX designer at Razorfish and Texas Instruments before he received his MFA in design from the University of Texas at Austin in 2006. His MFA thesis became the internationally recognized and award-winning sustainable design website www.re-nourish.org. His work with Re-nourish translated into an academic career where he currently is an Associate Professor of Graphic Design at the University of Illinois at Urbana-Champaign. His research and teaching at Illinois laid the foundation to create the Fresh Press Agri-Fiber Paper Lab. Fresh Press explores the potential of papermaking to be zero waste, environmentally sustainable, and a catalyst for a thriving local economy. Benson has published and lectured internationally on the importance of sustainable design.

Sustainability, circular economy, economic growth, and social development are my passions. With over 15 years of experience working in a circular economy, I have experience with material flow, life cycle assessment, zero waste programs, environmental risk assessment, environmental management system, human development, and community engagement. Throughout my career, I have worked in and with numerous industries (chemistry, pharmaceuticals, automotive, energy, food and beverage, pulp and paper, and mining) and policymakers in Latin America and Europe. In addition to circular economy and sustainability, I am also experienced in partnership building, stakeholder engagement, and human development. I have been a member of several international non-profit organizations' committees focused on sustainability, circular economy developments, community development, and social justice.

Presencing student, mindfulness practicer and paradigm shift pupil . This is the time to make a difference. We really are all in this together, every one of us. Your friends, neighbours, parents, siblings, boss, acquaintance, enemy, stranger all rely on you, me and each other. We dont have to like everyone. But we do have to see past personal differences and start to understand, accept, forgive and empower each other for the benefit of us all. We live on a finite planet, lets get over ourselves and act like it. I have a particular set of skills that aren’t exactly relevant but my story is. I would like to listen, learn and understand. If I can help, I will.
